What’s So Special About Chicken Sotanghon Soup?
My friend once questioned me about what makes Amber’s Restaurant’s sotanghon soup so special and why I was chosen as its brand ambassador. The flavor, nutritional value, and spices were my responses (and they remain my responses).
Ingredients: A range of ingredients, including eggs, chicken stock, veggies, and meat from chickens, combine to create a flavorful and aromatic Sotanghon soup.
Healthy Meal: When I’m feeling down or have a cold, I sometimes eat this soup for dinner. It’s so nourishing and healthful that you’ll feel energized right away.
Spices: The soup gains flavor from the combination of spices such as fish sauce, pepper, and others. The freshly boiled eggs add even more deliciousness to the whole experience.
Let’s Make Sotanghon Soup at Home
Here’s the secret of Sotanghon soup. You can follow the same steps and enjoy it at home with family and friends.
Key-Ingredients:
- 1 medium carrot (cut into strips)
- 1 cup of sliced green beans
- 1/2 kilo of pre-cooked chicken breast (shred cooked meat)
- 3 tablespoons of fish sauce (patis)
- 2 medium onions (sliced)
- 6 cloves of garlic (chopped)
- 2 liters of hot water
- 1/2 liter of chicken stock
- 2 tablespoons of chicken powder (or 2 chicken bouillon cubes)
- 1/2 teaspoon of black pepper
- 3 tablespoons of atsuete seeds
- 1/2 cup of chopped celery
Instructions for Cooking
- First, chop the vegetables finely. Fill a cooking pot with boiling water. After bringing the mixture to a boil, add the chicken and the dried bay leaf. Cook for 20 to 25 minutes. This stage involves getting the chicken ready for cooking.
- Transfer the cooked meat to a small bowl for later use and shred it. Add oil to a different saucepan and fry over medium heat before adding the garlic and sautéing it.
- After a few moments, you must wait for the garlic cloves to turn golden before adding the onion. For a few minutes, give them a good stir in the pot.
- Cook the chicken for a few minutes after adding the shredded chicken pieces, fish sauce, and chicken powder. The chicken will get a distinct flavor from the fish sauce and chicken powder.
- Add the carrots and keep stirring with the spoon. Add the atsuete seeds, black pepper, chicken stock, and hot water.
- Recall that adding atsuete seed requires a somewhat different technique. After straining the atsuete seeds, carefully add them to the cooking saucepan. Allow the atsuete seeds to steep in the heated liquid; this is the desired color change that will occur soon in the soup.
- Take the strainer and the atsuete seeds out of the pot once the soup has become a different color. Green beans and celery should be added, then the saucepan should be allowed to cook.
- Finally, add the noodles, bring to a boil, and then add the eggs. It is now time to serve the sotanghon soup!
